Breakfast Ham Hash

    Ingredients

    • 1 cup Hahn’s Ham, diced
    • 3 cups frozen diced hash brown potatoes
    • ½ yellow onion, diced
    • ¼ cup cheddar cheese, shredded
    • 3 eggs
    • 1 tbs. butter
    • Chopped green onion, for garnish
    • salt and pepper, to taste

    Method

    1. Preheat oven to 400˚F
    2. In a large oven-safe skillet, melt butter over medium-high heat. Add onion and cook, stirring frequently until softened (about 5 minutes).
    3. Add potatoes and ham to skillet. Stirring occasionally, cook until potatoes and ham are lightly browned. Season with salt and pepper.
    4. Create three wells in the hash mixture using the back of a wooden spoon. Crack an egg into each of the wells. Sprinkle shredded cheese over the eggs and hash.
    5. Place skillet into the oven and bake for about 7 minutes, or until egg whites or set but the yolk is still runny.
    6. Remove from oven, garnish with chopped green onion, and enjoy!
