Ingredients
- 1 cup Hahn’s Ham, diced
- 3 cups frozen diced hash brown potatoes
- ½ yellow onion, diced
- ¼ cup cheddar cheese, shredded
- 3 eggs
- 1 tbs. butter
- Chopped green onion, for garnish
- salt and pepper, to taste
Method

- Preheat oven to 400˚F
- In a large oven-safe skillet, melt butter over medium-high heat. Add onion and cook, stirring frequently until softened (about 5 minutes).
- Add potatoes and ham to skillet. Stirring occasionally, cook until potatoes and ham are lightly browned. Season with salt and pepper.
- Create three wells in the hash mixture using the back of a wooden spoon. Crack an egg into each of the wells. Sprinkle shredded cheese over the eggs and hash.
- Place skillet into the oven and bake for about 7 minutes, or until egg whites or set but the yolk is still runny.
- Remove from oven, garnish with chopped green onion, and enjoy!
